Hey my lovelies!

After what felt like ages of pondering what to post as my first blog post, I finally decided on dedicating it to brownies. Why, you might ask? Well, that's because a) I ABSOLUTELY LOVE brownies. They're one of my favorite things to bake, and b) the most searched recipe on Google during this lock down period has got to be brownies.


I've spent a whole decade perfecting brownie recipes and I can safely say that this is the BEST one I’ve ever concocted. These brownies are GUARANTEED to leave you smacking your lips for more. They’re fudgy on the inside and have the cracked top that we all love! What's more, they don't even require any fancy ingredients, such as chocolate chips or baking chocolate. You’re bound to find all the ingredients for these brownies sitting in your pantry.


Ingredients

1. ½ cup all purpose flour

2. ½ cup good quality unsweetened cocoa powder

3. ¼ tsp salt

4. 1 ⅛ cup castor sugar

5. 1 tbs cooking oil

6. ½ cup unsalted butter, melted

7. 2 large eggs

8. 2 tsp vanilla essence

Instructions

1. Preheat the oven to 350F/175C. Prepare an 8 inch square/9 inch round pan by lining it with parchment paper or by greasing it with oil/butter.

2. In a large bowl, using an electric beater, beat together hot melted butter, oil and sugar for a minute. Add in eggs and vanilla and beat further for 2 minutes.

3. Sift in cocoa powder, flour and salt.

4. Using a spatula/wooden spoon, fold dry ingredients into wet until just combined. Be careful not to over mix.

5. Pour the brownie batter into the prepared cake pan. Bake for 20 minutes, or until the centre of the brownies are set to the touch. If tested with a toothpick, the toothpick will come out dirty due to fudgy texture.

6. Remove the brownies from the oven and let cool completely before removing them from the pan.
